These looks like pancake perfection! I’m mildly obssessed with pancakes too. I love using whole wheat and buttermilk and I sometimes put in some buckwheat for extra heartiness too. I can’t wait to try this recipe, looks nice and fluffy.

Made these yesterday and I can vouch for their yumminess. Adding chocolate chips is a definite necessity in my book, they compliment the muffin perfectly.

We really enjoyed this for dinner tonight. I pureed the tomatoes before adding the feta and chickpeas, to make it more child-friendly, and it went over really well.
